The perfect summer dip, condiment, or topping, that goes with almost anything! This plant-based tzatziki tastes like the real thing, and brings us all of those sunbathing-on-a-Greek-island vibes...
200g Oatly Greek-Style Yogurt (this could be substituted for another thick plant-based yogurt of your choice)
1 Garlic Clove (grated)
1/2 Lemon (juice only)
Salt + Pepper (to taste)
Extra Virgin Olive Oil (to garnish, optional)
1. Firstly, grate the cucumber and place it in a siv over a bowl. Sprinkle the cucumber with some sea salt and leave for 10-20 mins to encourage excess liquid to be released.
2. Then simply combine all of the ingredients in a bowl + serve! Note: the salt added to the cucumber is all that is needed, so just add some pepper here.
